Large, perennial vegetable that is very cold hardy. Very large, heart-shaped leaves with tall, thick, crisp, cherry-red stalks. Stalks of this variety are high quality and one of the sweetest of the red rhubarbs: can be used for sauces, pies, canning, cooking and wine. Leaves should not be eaten as they are poisonous. Harvest the stalks when they are at least 12-18″ tall, leaving at least 2 stalks per plant to ensure continued production. Do not harvest any stalks the first summer after planting to let the plant build energy and establish itself. Plant roots 1-2″ (no lower) below soil surface and mulch slightly in fall to prevent roots form drying out. Prefers rich, moist, well-drained soil but does well in many soil types and is drought tolerant once established. Fertilize in spring before new growth with a good compost or an all-purpose fertilizer.
